Cozy Apple Pie Chia Pudding
A few weeks ago, I did my first cooking demo! I taught 20 people how to make three seasonal recipes, and one of them was this absolutely delicious apple pie chia pudding. It was such a rewarding experience to share my love for seasonal ingredients and show how easy it can be to create healthy, flavorful dishes. The best part was seeing everyone’s excitement as they learned how to make dishes that are simple, healthy, and delicious. Also, the room smelled like warm spices and autumn apples.

Stewed Apples
As much as I love fresh fruit, I especially enjoy cooked fruit during the cooler months. Stewed apples are one of my favorites — simple to make, full of cozy flavor, and perfect for leftovers. They’re great on oatmeal, yogurt, or chia pudding, adding a touch of natural sweetness and a boost of fiber.
Just cut up your apples, toss them in a pan, and add a splash of water, a dash of cinnamon, and a drizzle of maple syrup. Cook them over medium heat until they’re soft and tender.
How to Make Plump Chia Pudding
Ever make chia pudding that turns out stiff and clumpy instead of creamy and light? You’re not alone, it all comes down to the right ratio, mixing method, and a little patience.
The key to plump chia pudding is to give the seeds enough liquid and time to fully absorb it. I like to start with a ratio of about 3 tablespoons of chia seeds to 1 cup of almond milk.
After mixing together the milk, maple syrup, and coconut yogurt, let the mixture rest for 5-10 minutes, then stir again to break up any clumps. After this second stir, check the consistency and add a little more milk if needed. This step ensures a smooth, creamy, pudding-like texture.
Layering your Apple Pie Chia Pudding
To assemble, start with a layer of chia pudding at the bottom of your glass. Next, add a layer of apple sauce, followed by a dollop of coconut yogurt. Top it with a layer of stewed apples and finish with a sprinkle of sliced almonds for crunch. This layering not only looks beautiful but also gives you a mix of textures and flavors in every spoonful!

- Prepare the chia pudding: Pour the milk into a bowl then add the chia seeds, coconut yogurt, and maple syrup. Mix everything together until fully combined. Let the mixture rest for 5-10 minutes, then stir again to break up any clumps. Check the consistency and add a little more milk if needed. Cover and refrigerate.
- Assemble the pudding: Layer the chia pudding at the bottom of your glass or bowl. Add a layer of apple sauce, followed by a dollop of coconut yogurt. Top with stewed apples and finish with a sprinkle of sliced almonds.
