Veggie sandwiches are my new summer obsession. I have to be honest—this was my first time ever making a veggie sandwich, and I was completely blown away by how delicious it turned out. I couldn’t believe how much flavor it had, and how easy it was to put together.
I started with a fresh Skagen loaf of artisanal bread from Ole & Steen, a Danish bakery in New York City. Then I walked over to the Union Square Greenmarket to grab some crisp cucumbers and fresh lettuce. I already had the rest of the ingredients at home.
Simple, fresh, and incredibly satisfying—I think summer 2025 is going to be all about veggie sandwiches for me. I’m excited to keep experimenting with new combinations and flavors!
Here’s What It Takes to Make A Great Veggie Sandwich
1. Quality Bread
Start with a good base—something sturdy but not too dense. Great choices include:
Artisanal sourdough
Multigrain or seeded bread
Skagen loaf
Ciabatta or baguette
2. Fresh, Crisp Veggies
Mix textures and flavors. Go for:
Sliced cucumber (for crunch)
Lettuce or arugula (freshness and bite)
Tomatoes (juicy and slightly acidic)
Bell peppers (sweet and crisp)
Avocado (creamy richness)
Red onion or pickled onions (a bit of tang)
3. Spread or Sauce
This adds moisture and flavor:
Hummus or pesto
Herbed cream cheese
Dijon mustard or aioli
Olive tapenade
A drizzle of good olive oil and vinegar
4. Extras for Flavor Boost
These take it to the next level:
Feta, goat cheese, or fresh mozzarella (if you're not keeping it vegan)
Roasted veggies (like zucchini, eggplant, or mushrooms)
Sprouts or microgreens
Fresh herbs (basil, dill, mint)
A sprinkle of salt, pepper, and maybe chili flakes
5. Assembly & Toasting
Layer thoughtfully: start with the spread, then leafy greens, followed by juicy ingredients like tomato, and finish with crunchier ones.
Toasting the bread (or the full sandwich) adds warmth and texture.

Directions
Prep your ingredients:
Wash and dry all vegetables. Slice the cucumbers, tomato, red onion, and avocado. Shred or thinly slice the carrots. Tear or chop the lettuce if needed.Toast the bread:
Lightly toast your bread slices if you prefer a bit of crunch or warmth.Spread the cream cheese:
Generously spread cream cheese on one or both slices of bread. This will act as a flavorful base and help hold everything together.Layer the vegetables:
Start with the lettuce, then add cucumbers, carrots, tomato, red onion, and avocado. Layer in a way that keeps the sandwich balanced and easy to hold.Season:
Add a pinch of salt, pepper, or a drizzle of olive oil or lemon juice for extra flavor.Assemble and enjoy:
Place the second slice of bread on top, press gently, and slice in half if desired.

Whip up this quick and healthy veggie sandwich packed with fresh ingredients—perfect for lunch, picnics, or light summer dinners!
Ingredients

- Toast the bread. Brush olive oil on each slice and toast in a skillet over medium for 1–1½ minutes per side, until golden and crisp.
- Spread cream cheese & avocado. Immediately after toasting, spread cream cheese on one slice and add avocado to the other.
- Layer the lettuce. Place lettuce on the cream cheese–spread slice to keep the bread crisp.
- Add vegetables. Layer carrots, cucumber, red onion, and tomato on top of the lettuce.
- Add microgreens. Pile a generous handful of microgreens atop the tomato.
- Drizzle & season. Lightly drizzle extra virgin olive oil over the microgreens (a little drizzle goes a long way) . Finish with a few flakes of Maldon sea salt for texture and brightness .
- Assemble & serve. Close with the avocado slice, gently press to secure layers, cut diagonally, and enjoy immediately—this ensures the best balance of crisp, creamy, and fresh textures.
